Requesting to remove or an option to remove the pre-emptive text control on the POS app. Winery often needs to re-type names to search for the customer.

Perhaps you can further clarify the circumstances when you need to re-type a customer name?
As you know, search results show all possible matches in either name or email address based on the search term. Even incomplete search terms.
agree this is an issue when typing email addresses for receipts.
Also when entering customer details for orders to be delivered.
